Golden Beet Salad

Golden Beet Salad Recipe

 

Golden beet salad:

2 bunches of fresh Atkinson Farms beets golden or red
1/4 cup Spicewood Food Company peach aged white balsamic vinegar (you cannot find this at the market, but it is delicious!)
1/4 cup Olivethesefoods olive oil
1 garlic cove
Salt and pepper to taste
1/2 of a very thinly sliced sweet onion
2 oz fresh goat cheese
1 TBL minced beet greens for garnish

Boil your whole beets in water for about 20 minutes or until tender. Place in an ice bath and when cold enough to handle remove the skin. Slice beets about 1/4 inch thick and set aside.
In a medium size bowl add your vinegar, one garlic clove very finally minced, salt and pepper, and then whisk in the olive oil with these ingredients. Pour vinegar mixture over your sliced beets and top with goat cheese, onion, beet green garnish, and fresh black pepper.
This is even better the next day!
