1 pound of Eclectic Acres Farm sausage.
1/4 cup Lone Star Olive Oil from Olivethesefoods
1 onion, diced
2 bunches of Atkinson Farms rainbow Swiss chard rinsed and chopped (stems included)
5 garlic cloves, minced
1 48 container of chicken broth or water with chicken base added
1 1/2 cups lentils
In a medium size, Dutch oven, brown, sliced sausage, and olive oil . Remove sausage and set aside. Add your prepared greens along with onions to the reserved pan with drippings sauté about five minutes on medium heat then add your very finally minced garlic and sauté one minute. Add your chicken broth and simmer for about 20 minutes until flavors combine. Add your lentils to the pot and simmer another 20 minutes until tender. This would be great with a spoon full of chow chow from Atkinson Farm!
